Ingredients
2 tbsp olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 tsp smoked paprika
¼ tsp cayenne pepper (optional, for heat)
1 tbsp tomato paste
½ cup canned crushed tomatoes
½ tsp sugar
Salt, to taste
Splash of sherry vinegar or red wine vinegar

Step 1
Heat the olive oil in a small saucepan over medium heat.

Add the finely chopped onion and sauté for 5–6 minutes until soft and translucent.

Stir in the minced garlic and cook for 30 seconds, just until fragrant.

Add the smoked paprika and cayenne pepper (if using); stir for another 30 seconds.

Mix in the tomato paste and cook for about 1 minute to deepen the flavor.

Pour in the crushed tomatoes and add the sugar.

Simmer the sauce for 5–6 minutes, stirring occasionally, until it thickens slightly.
