Ingredients

  • 1 package (16 oz) potato gnocchi

  • 2 tablespoons olive oil

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 8 oz cremini mushrooms, sliced

  • 2 cups fresh spinach, roughly chopped

  • 1 cup heavy cream

  • 1/2 cup grated Parmesan cheese

  • Salt and pepper to taste

  • Fresh basil leaves for garnish


Steps

Step 1

Cook gnocchi according to package instructions, drain, and set aside.

Step 2

In a large skillet, heat olive oil over medium heat. Add onion and garlic, sautéing until translucent, about 3-4 minutes.

Step 3

Add sliced mushrooms to the skillet, and cook until they are soft and browned, about 5-7 minutes.

Step 4

Stir in the spinach and cook until it wilts, approximately 2-3 minutes.

Step 5

Lower the heat and add the heavy cream, bringing the mixture to a gentle simmer. Stir in the Parmesan cheese until it melts into the sauce.

Step 6

Add the cooked gnocchi to the skillet, tossing to coat in the creamy sauce. Season with salt and pepper to taste.

Step 7

Serve hot, garnished with fresh basil leaves.
