Everything Bagel Avocado Toast

I was never an avocado toast person, but recently I've been trying to mix it up and had a bunch of avocados on hand. This version has been my favorite lately because it has layers of flavor and isn't bland like some of the other avocado toasts I've tried. The diced onion adds crunch, the Everything But The Bagel seasoning brings plenty of flavor, and the cilantro freshens everything up.

The avocado mixture is what makes this one different. Instead of seasoning with plain salt and pepper, I mash the avocado with Everything But The Bagel seasoning and fold in diced onion. It gives every bite a little more texture and saves you from needing a bunch of extra toppings.

I think Italian bread works great for this. Once toasted, it stays crisp enough to support the avocado without getting soggy. Cutting the toast into halves makes it easier to eat and gives it that café-style presentation.

The soft-boiled egg is my favorite part. Six minutes gives you a perfectly jammy center, but I usually cook mine for seven minutes because I like the yolk a little less soft.

This is a breakfast that comes together in about 15 minutes and works equally well for breakfast, lunch, or even a quick snack.


Ingredients

  • small avocados

  • 2 tablespoons diced red onion

  • 1 teaspoon Everything But The Bagel seasoning

  • 1 large egg

  • 1 slice Italian bread

  • 1 tablespoon chopped fresh cilantro


Steps

Step 1

Bring a small pot of water to a boil. Carefully lower the egg into the boiling water and cook for 6 minutes for a jammy yolk, or 7 minutes if you prefer it slightly more set.

Step 2

While the egg cooks, toast the Italian bread until golden brown and crisp around the edges. Cut it in half and set aside.

Step 3

While the bread is toasting, add the avocados to a small bowl. Mash with a fork until mostly smooth, leaving a little texture. Stir in the diced onion and Everything But The Bagel seasoning.

Step 4

When the egg is finished cooking, transfer it immediately to an ice bath and let it cool for a few minutes.

Step 5

Spread the avocado mixture evenly over both pieces of toast.

Step 6

Peel the egg, slice it in half, and place it on top of the avocado toast.

Step 7

Sprinkle with chopped cilantro and serve immediately.


Make it your own!

  • 🌶️ Add a little heat

    Top the finished toast with red pepper flakes, hot sauce, or sliced jalapeños for a spicy version.

  • 🧀 Add cheese

    Crumbled feta or goat cheese pairs really well with the creamy avocado and fresh cilantro.

  • 🍅 Add tomatoes

    Diced cherry tomatoes bring a little sweetness and extra freshness.

  • 🥓 Make it heartier

    Add crispy bacon or turkey bacon if you want a little more protein.
