Ingredients

6 oz fettuccine or linguine
2 tbsp toasted sesame oil
3 cloves garlic, minced
½ tsp crushed red pepper flakes (more to taste)
1 tbsp soy sauce
1 tbsp rice vinegar (or lime juice)
1 tsp sugar or honey
1 tbsp chili crisp (optional, but highly recommended)
1 tbsp sesame seeds
2 green onions, thinly sliced
1 tbsp neutral oil (like canola or avocado oil)
Salt, to taste
Steps
Step 1
Bring a large pot of salted water to a boil and cook the fettuccine until al dente. Reserve ¼ cup of the pasta water before draining.
Step 2
While the pasta cooks, heat the neutral oil in a small pan over medium heat. Add the garlic and crushed red pepper and sauté for 30 seconds, just until fragrant.
Step 3
Stir in the sesame oil, soy sauce, rice vinegar, sugar, and chili crisp. Remove from heat.
Step 4
Add the drained noodles to a large bowl. Pour the hot sauce over the noodles and toss well to coat.
Step 5
Add the reserved pasta water a splash at a time to loosen the sauce and help it cling to the noodles.
Step 6
Top with sliced green onions and sesame seeds. Serve warm, with extra chili crisp if desired.
