Avocado Baguette Toast

You know those recipes that are barely a recipe but still deserve a shoutout? This is one of those. Warm, crusty baguette. Creamy mashed avocado. Garlic powder, smoked paprika, and a hit of everything bagel seasoning. It’s salty, savory, a little smoky — and way more than the sum of its parts.

I started making this with the mini baguettes from Trader Joe’s, but honestly any baguette works. You just want something with a crisp crust and soft inside. Toast it up, mash an avocado right on top, and hit it with garlic powder and smoked paprika. The everything bagel seasoning is the finishing move — it adds texture, salt, and those little bursts of onion and sesame that make the whole thing addictive.

This works as a breakfast, snack, a lazy lunch, or a starter if you’re hosting. You could even slice the baguette into rounds for party bites. It’s the kind of thing that’s so good you’ll start keeping avocados on hand just for this.


Ingredients

🍽️ Servings: 2 (makes 4 toasts) • 🔥 Calories/Serving: 260

  • 1 mini baguette (or ½ regular baguette), sliced in half lengthwise and then across to make 4 pieces

  • 1 ripe avocado

  • ¼ tsp garlic powder

  • ¼ tsp smoked paprika

  • 1 tsp everything bagel seasoning (or more to taste)

  • Pinch of flaky salt (optional, if your seasoning isn’t salty)


Steps

Step 1

Preheat your oven (or toaster oven) to 375°F.

Step 2

Slice the baguette and place pieces cut-side up on a baking sheet.

Step 3

Bake for 5–7 minutes, or until the edges are crisp and the center is warm and soft.

Step 4

While the bread is toasting, mash the avocado in a bowl with a pinch of salt if needed.

Step 5

Spread the mashed avocado evenly over the warm baguette pieces.

Step 6

Sprinkle each piece with garlic powder, smoked paprika, and everything bagel seasoning.

Step 7

Serve right away while the bread is still warm and crisp.
