Cheesy Salsa Roja Shredded Beef Sliders

I wanted something that had that rich, saucy, dip-it kind of feel, but without needing to hunt down a bunch of specialty ingredients. This is what I landed on, and I’ve already made it more than once.
The shortcut here is using a really good jar of salsa roja as the base for the sauce. It already has the tomatoes, peppers, and seasoning, so you’re building flavor without starting from scratch.
Once the beef cooks down, it soaks up all of that sauce and gets really tender. It’s the kind of filling that doesn’t dry out and actually gets better as it sits.
Baked into sliders with cheese and served with extra sauce on the side, this is one of those things that disappears fast at a party.
Ingredients

For the shredded beef
2 lbs chuck roast, cut into large chunks
1 (16 oz) jar smooth red salsa (restaurant-style, not chunky)
1 cup beef broth
3 cloves garlic, minced
1 tsp cumin
½ tsp smoked paprika
½ tsp salt
½ tsp black pepper
For the sliders
12 slider buns (Hawaiian rolls work well)
1 ½ cups shredded mozzarella or Mexican blend cheese
2 tbsp butter, melted
2 tbsp chopped cilantro
Steps
Step 1
Place the chuck roast in a large pot, slow cooker, or pressure cooker.
Step 2
Add salsa roja, beef broth, garlic, cumin, smoked paprika, salt, and pepper. Stir to combine.
Step 3
Cook until the beef is very tender:
Slow cooker: low for 6–8 hours or high for 4–5 hours
Stovetop: simmer covered for 2–3 hours
Pressure cooker: high for 45 minutes, then natural release
Step 4
Remove the beef and shred it using two forks. Return it to the sauce so it stays coated and juicy.
Step 5
Preheat oven to 350°F. Slice slider buns in half and place bottoms in a baking dish.
Step 6
Layer shredded beef over the buns, then add cheese. Place the top buns on.
Step 7
Brush tops with melted butter and sprinkle with cilantro.
Step 8
Bake for 10 to 15 minutes, until cheese is melted and tops are lightly golden.
Step 9
Spoon some of the cooking sauce into small bowls and serve alongside for dipping.
Make it your own!
🌶 Spicy Version: Use a hot salsa or add sliced jalapeños into the beef while cooking.
🧅 Add Texture: Mix in sautéed onions or peppers before assembling the sliders.
🧀 Different Cheese: Pepper jack adds a little heat and melts really well.
🍋 Finish with Lime: A squeeze of lime at the end brightens everything up.
