Easy Falafel Pita with Fries & Feta

I make this falafel pita on repeat because it is super easy, and feels like something I could get from a nearby restaurant. It uses pre-made, fully-cooked, falafel, which is exactly why it works so well on a busy day.

The Trader Joe’s fully cooked falafel is the hero of this dish. I like air frying it because it gets crisp on the outside while staying soft inside, but you can also bake it if you don’t have an air fryer. Three per pita feels like the right amount so you get some in every bite, but you can adjust depending on how full you want it.

The fries might sound like a lot, but they’re what make this feel like a full meal. I usually add about 10 to 15 per pita depending on the size. They bring warmth and crunch, and they hold up really well tucked inside with everything else.

This comes together quickly and doesn’t take much planning. If you prep the veggies ahead of time, it’s easy to throw together between meetings. You can use any falafel you like or even swap in gyro meat, but the pre-made falafel is what keeps this one in the easy category.


Ingredients

  • 6 Trader Joe’s fully cooked falafel (3 per pita)

  • 30 frozen French fries (about 15 per pita)

  • 2 pita breads

  • ½ cup hummus

  • 8 grape tomatoes, quartered

  • ¼ cup diced white onion

  • ¼ cup crumbled feta

  • 4–6 leaf lettuce pieces


Steps

Step 1

Preheat your air fryer to 375°F.

Step 2

Add the frozen French fries in a single layer and cook for 6 to 7 minutes.

Step 3

Open the air fryer, shake the fries, then add the falafel directly into the basket. Continue cooking for another 6 to 8 minutes until the fries are golden and crisp and the falafel is heated through and lightly crispy on the outside.

Step 4

Warm the pita breads. You can do this in a dry pan over medium heat for 1 to 2 minutes per side or wrap them in a damp paper towel and microwave for about 20 seconds.

Step 5

Spread hummus generously down the middle of each pita. Layer in the leaf lettuce, then add 3 falafel, about 10 to 15 fries, the quartered tomatoes, onion, and feta.

Step 6

Serve immediately while everything is warm and the fries are still crisp. I usually fold it like a taco to keep everything tucked in.


Make it your own!

  • 🌶️ Make it spicy: Add hot sauce or chili crisp for heat that cuts through the richness.

  • 🥙 Make it a bowl: Skip the pita and serve everything over greens or rice.

  • 🍋 Brighten it up: Squeeze fresh lemon over the top right before serving.
