Cozy Garden Vegetable Soup
β±οΈ Prep Time: 10 minutes β’ π³ Cook Time: 25 minutes
This garden vegetable soup is my go-to reset button. Whether you're feeling under the weather or just need something gentle and grounding, this one delivers all the comfort without the heaviness. Itβs full of vibrant veggies, simmered in a garlicky, herby broth thatβs soothing and satisfying.
A light, brothy veggie soup that tastes incredibly fresh!
The best part? You can throw this together with whateverβs in your crisper drawer. Iβve made this with fresh, frozen, and even canned vegetablesβanything goes. Itβs super flexible, naturally vegan, and it reheats like a dream. If youβre up for it, a piece of crusty bread on the side makes it feel like a full-on meal.
The flavor really comes alive thanks to a little tomato paste and dried herbs, which give the broth depth without making it rich or overwhelming. And while Iβve included my favorite veggie combo below, you can absolutely swap in what youβve got. Itβs just good, clean, simple soup.
