Creamy Lemon Pepper Orzo with Spinach & Parmesan

This one-pot orzo dish is the weeknight hero you didn’t know you needed. It’s cozy, creamy, bright from the lemon, and feels a little fancy even though it takes barely 20 minutes and zero brain power. Bonus: it uses pantry staples, sneaks in some greens, and only dirties one pan. Perfect for when you’ve been in class, worked a shift, walked the dogs, and just need something easy and good.

This is the recipe I go to when I’m toast. You dump the orzo in a skillet with broth, let it simmer like risotto (but way faster), then stir in some spinach, lemon zest, and a bit of cream or cream cheese to bring it together. It’s creamy but not heavy, and you can eat it on its own or serve it with a soft-boiled egg, rotisserie chicken, or just more cheese. No chopping, no measuring stress, no drama.

You can also batch this one—it reheats like a dream and you can throw whatever’s in your fridge into it later in the week (peas, roasted veggies, canned tuna, you name it). It’s flexible, fast, and actually feels like a hug in a bowl. Highly recommend eating it in pajamas.

Ingredients

  • 1 tbsp olive oil

  • 1 cup orzo

  • 2 cups chicken or veggie broth

  • 2 big handfuls baby spinach

  • 2 tbsp cream cheese or 1/4 cup heavy cream

  • 1/3 cup grated Parmesan cheese

  • 1 lemon (zest + juice)

  • 1/2 tsp cracked black pepper

  • Salt, to taste


Steps

Step 1

Heat olive oil in a deep skillet over medium heat. Add orzo and sauté for 1–2 minutes until lightly toasty.

Step 2

Pour in the broth and bring to a simmer. Cook uncovered, stirring occasionally, until the liquid is mostly absorbed and orzo is tender, about 10–12 minutes.

Step 3

Stir in the spinach and let it wilt for 1–2 minutes.

Step 4

Add cream cheese (or cream), Parmesan, lemon zest, lemon juice, and black pepper. Stir until smooth and creamy. Taste and adjust salt or lemon as needed.

Step 5

Serve hot, with extra Parmesan or a soft-boiled egg on top if you’re feeling fancy.


Make it your own!

  • 🍗 Add protein
    Stir in shredded rotisserie chicken or a can of white beans at the end.

  • 🍋 Boost the lemon
    Add a squeeze of lemon juice right before serving for more brightness.

  • 🥦 Throw in veg
    Toss in frozen peas, broccoli florets, or roasted veggies you’ve got in the fridge.

  • 🧄 Garlic it up
    Add a minced garlic clove with the orzo if you want a little depth.
