Crispy Tot and Avocado Breakfast Bowl

I go through phases where I want a filling breakfast but the thought of eggs sounds terrible. This bowl has been my answer lately. Crispy air-fried tots, jammy tomatoes and onions, creamy avocado, and a warm tortilla on the side to scoop everything up. It feels hearty enough to keep me full, but still fresh and light enough for slower mornings.

The tomatoes are my favorite part of this bowl. I let them cook down in olive oil until they soften and start getting a little jammy. They mix with the onions and create this really savory base that works so well with the crispy potatoes and cool avocado.
I also think the warm tortilla makes the whole thing better. You can tear pieces off and scoop everything up almost taco-style. The everything bagel seasoning adds crunch and saltiness without needing much extra effort.
This is one of those breakfasts that feels flexible depending on what you have around. Sometimes I add hot sauce or feta. Sometimes I throw in black beans if I want something even more filling. It also works well as a quick lunch.
Ingredients

1 1/2 cups frozen potato tots
1/2 small avocado, diced
1/2 cup cherry tomatoes, halved
1/4 cup diced onion
1 teaspoon olive oil
1 small flour tortilla
1 teaspoon everything bagel seasoning
Salt and pepper, to taste
Steps
Step 1
Cook the tots in the air fryer according to package directions until golden brown and crispy.
Step 2
Heat the olive oil in a small skillet over medium heat. Add the diced onion and cook for 3 to 4 minutes until softened.
Step 3
Add the cherry tomatoes to the skillet. Cook for another 5 to 6 minutes, stirring occasionally, until the tomatoes soften and become slightly jammy.
Step 4
Warm the tortilla in a dry skillet or microwave until soft and pliable.
Step 5
Add the crispy tots to a bowl. Spoon the tomato and onion mixture over top, then add the diced avocado.
Step 6
Sprinkle everything bagel seasoning over the bowl. Serve with the warm tortilla on the side for scooping.

I usually add a few shakes of hot sauce when I want a little extra heat. Sriracha or Cholula both work really well here.🧀 Add Cheese
Crumbled feta or shredded cheddar melts nicely into the warm tomato mixture and makes the bowl a little richer.🫘 Make it Heartier
Add black beans or crispy chickpeas if you want extra protein without adding eggs.🥑 Double the Avocado
If your avocado is small, use the whole thing. The creaminess balances the crispy tots really nicely.
