Crispy Tot Breakfast Street Tacos

I started making these on mornings when I wanted something filling but wasn't in the mood for eggs. They take less than 10 minutes, use ingredients I almost always have on hand, and still feel like a real breakfast instead of grabbing something out of a package.
Two crispy breakfast tacos loaded with golden tater tots, quick corn salsa, sour cream, and Cholula hot sauce.
The thing that makes these work is the combination of crispy tater tots and the fresh corn salsa. The tots add crunch and make the tacos surprisingly satisfying, while the lime juice, cilantro, and red onion keep everything from feeling too heavy.
I usually make a batch of the salsa ahead of time and keep it in the fridge. That way breakfast comes together in minutes. The salsa also works well on bowls, salads, and tacos throughout the week.
These have become one of my most repeated breakfasts. They're quick enough for a workday morning and easy to customize depending on what you have in the refrigerator.
Ingredients

For the Tacos
2 Mission flour street taco tortillas
10 Ore-Ida Crispy Crowns (or tater tots)
2 tablespoons sour cream
Cholula hot sauce, to taste
For the Quick Corn Salsa
½ cup canned corn, drained
2 tablespoons diced red onion
1 tablespoon chopped fresh cilantro
1 teaspoon lime juice
¼ teaspoon smoked paprika
¼ teaspoon kosher salt
Steps
Step 1
Cook the Crispy Crowns according to package directions until golden brown and crisp. I air fry mine but you can bake them as well, if you don’t have an air fryer.
Step 2
While the tots cook, combine the corn, red onion, cilantro, lime juice, smoked paprika, and salt in a small bowl. Stir until evenly mixed.
Step 3
Warm the tortillas in a dry skillet over medium heat for 15 to 20 seconds per side, or until soft and pliable.
Step 4
Place 5 Crispy Crowns in each tortilla. Gently press them down with the back of a spoon so they create an even base.
Step 5
Divide the corn salsa between the two tacos.
Step 6
Top each taco with a dollop of sour cream and a few dashes of Cholula (or your favorite hot sauce!)
Step 7
Serve immediately while the tots are still crisp.

🥑 Add Avocado
Sliced avocado makes these even more filling and pairs well with the lime and cilantro.
🌶️ Turn Up the Heat
Add diced jalapeños to the salsa or use extra Cholula if you like a spicier breakfast.
🧀 Add Cheese
Sprinkle shredded cheddar, cotija, or feta over the tacos before serving.
🍅 Mix in Tomatoes
Cherry tomatoes or diced roma tomatoes add extra freshness and color.
