This toast is my go-to when I want something comforting but still fresh. The soft-boiled eggs add that perfectly runny yolk that drips into the mashed avocado and gets soaked up by the bread—it’s rich, satisfying, and honestly kind of therapeutic to eat. If you're not into precise cooking, don’t worry—six minutes in boiling water gets you that soft-set white and golden liquid center every time.
I usually throw this together for a late breakfast or a lazy lunch. It feels elevated but takes no time, and you can dress it up however you want. I love adding microgreens or a pinch of red pepper flakes for color and flavor, but it’s also totally delicious just as is. It’s one of those reliable staples that never lets me down and always makes me feel like I’m doing something good for my body.
Ingredients

1 slice whole-grain bread, toasted
½ ripe avocado
2 eggs
¼ tsp red pepper flakes (optional)
Pinch of flaky sea salt
½ tsp olive oil (optional)
1 tbsp microgreens or sprouts (optional)
Steps
Step 1
Bring a small pot of water to a boil.
Step 2
Gently add eggs and boil for 6 minutes for soft-boiled yolks.
Step 3
Transfer eggs to an ice bath to cool for a couple of minutes, then peel and slice in half.
Step 4
While eggs cool, mash avocado in a small bowl with a pinch of salt and optional olive oil.
Step 5
Spread mashed avocado over toasted bread.
Step 6
Top with halved soft-boiled eggs, red pepper flakes, and microgreens.
Step 7
Finish with a sprinkle of flaky sea salt and enjoy immediately.
