This recipe came from one of those “clean out the fridge but make it pretty” days—some leftover fruit, a half tub of ricotta, and a warm baguette waiting to be sliced. But once I started layering it all together and gave it that final balsamic drizzle, I knew it was going to be a summer staple. It’s fresh, a little indulgent, and totally flexible. Perfect for brunch spreads, afternoon snacks, or light summer desserts.
I love using strawberries and peaches here for their natural sweetness and vibrant color, but you can absolutely mix it up with whatever fruit you’ve got—figs, cherries, even grilled nectarines work beautifully. The sweet ricotta gives you this creamy, dreamy base that balances the tangy glaze and bright fruit perfectly. Trust me, you’re going to want to make extra.

Sweet Ricotta Spread:
1 cup ricotta cheese
2 tbsp powdered sugar (adjust to taste)
1 tsp vanilla extract
For the Bruschetta:
1 baguette, sliced into ½-inch pieces
2 ripe peaches, thinly sliced
1 cup strawberries, hulled and sliced
1 tbsp balsamic glaze
Fresh basil leaves, for garnish
Olive oil, for brushing

Step 1
Preheat your oven to 400°F (200°C).

Arrange baguette slices on a baking sheet and brush lightly with olive oil.
