There’s something about this combo that just feels like summer. It’s crisp, juicy, and just the right amount of sweet-tart—and it comes together in minutes.

Light, fresh watermelon and cucumber salad with lime, honey, and mint—perfect for warm days or a quick backyard bite.

I made this for the first time on a hot afternoon when I didn’t want to cook but still craved something refreshing and satisfying. Watermelon and cucumber make such a great pair—both are hydrating and crisp, but the watermelon adds a subtle sweetness that’s surprisingly great with a little salt and lime.

The torn mint really wakes the whole thing up, and the honey (or maple syrup if you’re keeping it vegan) rounds it all out without being sugary. It’s one of those salads that disappears fast at BBQs, but it’s also ideal for keeping in the fridge as a midday snack.

  • A pinch of salt


Steps

Step 1

Add the cubed watermelon and sliced cucumber to a large mixing bowl.

Step 2

In a small bowl, whisk together the lime juice, honey (or maple syrup), and a pinch of salt.

Step 3

Pour the dressing over the fruit and gently toss to combine.

Step 4

Sprinkle in the torn mint leaves and toss again lightly.

Step 5

Serve immediately or chill for up to 2 hours for an extra-cold version.
