This recipe came out of a fridge cleanout moment, and honestly? It might be one of my best accidental discoveries. I had leftover rotisserie chicken, some lonely arugula, and a few Hawaiian rolls—and I was craving something bold. The dressing came together in minutes with mayo, Dijon, hot honey, and a splash of vinegar, and wow did it sing.
These sliders are perfect for casual lunches, meal prep, picnics, or even party trays. You can make the chicken salad ahead of time and just assemble when you're ready to serve. I love the way the hot honey plays against the pickles—it’s that sweet-spicy-sour combo that keeps things interesting. And if you want to kick it up even more, a little pepper jack cheese or a smear of hot sauce takes them over the top.
Ingredients

2 cups shredded rotisserie chicken
¼ cup mayo
1 tbsp Dijon mustard
1½ tbsp hot honey (plus more for drizzling)
1 tsp apple cider vinegar
¼ tsp garlic powder
¼ tsp salt
¼ tsp black pepper
8 Hawaiian rolls, sliced in half
½ cup arugula
8 slices dill pickle rounds
Steps
Step 1
In a medium bowl, combine mayo, Dijon mustard, hot honey, vinegar, garlic powder, salt, and pepper.
Step 2
Add the shredded chicken and mix until evenly coated.
Step 3
Lay out the bottom halves of the Hawaiian rolls on a serving platter or board.
Step 4
Spoon the chicken salad evenly onto each roll.
Step 5
Top each slider with a few arugula leaves and one pickle slice.
Step 6
Drizzle a little extra hot honey over the top (optional, but highly recommended).
Step 7
Place the top halves of the rolls on and serve immediately—or wrap and chill for later.
