  • 1 pint cherry tomatoes, halved

  • 1 cucumber, diced

  • 1/2 cup Kalamata olives, pitted and sliced

  • 1/4 cup red onion, thinly sliced

  • 1/2 cup crumbled feta cheese

  • Fresh parsley, chopped (for garnish)

Dressing

  • 1/4 cup extra-virgin olive oil

  • 2 tablespoons red wine vinegar

  • 1 teaspoon Dijon mustard

  • 1 clove garlic, minced

  • 1 teaspoon dried oregano

  • Salt and pepper to taste

Steps

Step 1

In a large mixing bowl, combine the cooked and cooled orzo pasta, cherry tomatoes, cucumber, Kalamata olives, red onion, and crumbled feta cheese.

Step 2

In a separate small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, dried oregano, salt, and pepper to make the dressing.

Step 3

Pour the dressing over the orzo salad and toss gently until all the ingredients are well coated.

Step 4

Sprinkle chopped fresh parsley over the salad for an extra burst of flavor and color.

Step 5

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes before serving to allow the flavors to meld.

Make it your own!

  • Add some chopped fresh basil or dill for a burst of herbal freshness.

  • Swap the feta cheese for goat cheese or vegan cheese for a dairy-free option.

  • Include some roasted red peppers or artichoke hearts for extra Mediterranean flair.

  • For a heartier salad, toss in some cooked and cooled chickpeas or grilled chicken.
