Weeknight Smoky Ground Beef Tacos

This recipe is one of my favorite ways to use the Smoky Ground Beef Taco Filling. Once I already have the meat made, these tacos come together really fast and end up being one of those easy weeknight dinners that I never really get tired of.

Ground beef tacos are also one of those meals that can completely change depending on what you have in the fridge. This version is pretty simple and classic. Warm flour tortillas, juicy cherry tomatoes, sour cream, cilantro, and hot sauce. Nothing complicated.
For these, I usually use the Mission street taco flour tortillas because I like the texture and size, but corn tortillas or crunchy taco shells work perfectly too. I tend to gravitate toward soft tacos because they are easier to pile up and eat and hold together well with the juicy taco meat.
I kept the toppings simple here because the beef already has a lot of flavor, but this is also the kind of meal that works with almost anything. Chopped onion, jalapeños, shredded lettuce, avocado, cheese, pickled onions. Ground beef tacos are very forgiving and easy to adapt depending on your mood or whatever you already have sitting in the fridge.
This is also a really good way to repurpose leftover taco meat during the week. I usually make a batch of the beef ahead of time, then reheat portions throughout the next couple of days whenever I need something quick.
Ingredients

6 small flour street taco tortillas
1 1/2 cups smoky ground beef taco filling
1 cup chopped cherry tomatoes
1/3 cup sour cream
2 tbsp chopped cilantro
Hot sauce, for serving
Steps
Step 1
Warm the tortillas in a dry skillet over medium heat for about 30 seconds per side or until soft and flexible.
Step 2
Heat the taco meat in a skillet or microwave until warmed through.
Step 3
Fill each tortilla with the ground beef mixture.
Step 4
Top with chopped cherry tomatoes, sour cream, cilantro, and hot sauce.
Step 5
Serve immediately while the tortillas are still warm.
