Easy Falafel Lunch Bowl

I’ve been making some version of this falafel bowl a lot lately because it checks all the boxes I want during the workweek. It’s quick, filling, fresh, and requires very little effort beyond some chopping and throwing the falafel into the air fryer.

This recipe leans heavily on pre-made ingredients, which is very much intentional. The frozen falafel from Trader Joe’s is the center of the whole thing, and I pair it with store-bought hummus, tzatziki, and Greek dressing to keep lunch easy. You can absolutely make those things from scratch if you want to, but buying them pre-made makes this feel realistic for a random weekday between meetings.

The Trader Joe’s falafel works really well here because the outside gets crisp in the air fryer while the inside stays soft. I usually throw those in first, then spend the next ten minutes chopping vegetables and assembling everything else while they cook.

I love the mix of textures in this bowl. The crunchy cucumber and red onion with the creamy hummus and tzatziki. The salty feta. The soft naan. The sharpness from the Greek dressing. It feels more substantial than a salad but still light enough that I do not want to immediately lay down afterward.

This is also one of those lunches that is easy to keep ingredients around for. The vegetables can be chopped ahead of time and the rest mostly comes pre-made, which means I am far more likely to throw this together during the middle of a busy workday instead of ordering something.


Ingredients

  • 3 Trader Joe’s frozen falafel

  • 2 cups mixed greens

  • 1/2 cup chopped cucumber

  • 1/2 cup chopped cherry tomatoes

  • 2 tbsp diced red onion

  • 3 tbsp crumbled feta cheese

  • 2 tbsp sliced banana peppers

  • 1/4 cup store-bought tzatziki

  • 1/4 cup store-bought hummus

  • 1 naan round

  • 2 tbsp store-bought Greek dressing


Steps

Step 1

Preheat your air fryer to 375°F. Add the frozen falafel and air fry for 10 to 12 minutes, flipping halfway through, until golden brown and crisp on the outside.

Step 2

While the falafel cooks, chop the cucumber, cherry tomatoes, and red onion.

Step 3

Add the mixed greens to a bowl. Top with the cucumber, tomatoes, red onion, feta, and banana peppers.

Step 4

Add the hummus and tzatziki to the bowl.

Step 5

Warm the naan round for 20 to 30 seconds in the microwave or a few minutes in the oven until soft.

Step 6

Top the bowl with the falafel and serve with Greek dressing on the side or drizzled over the top.


Make it your own!

  • 🫒 Add olives
    Kalamata olives work really well here if you like a saltier bite.

  • 🌶️ Add heat
    I sometimes add hot sauce or extra banana peppers depending on my mood.

  • 🥙 Swap the naan
    Pita works perfectly too and is easier to keep in the freezer.

  • 🥒 Prep ahead
    Chop the vegetables ahead of time and keep everything separate in containers so lunch comes together fast during the week.
