Ingredients
For the churro bites:
1 cup water
2½ tbsp sugar
½ tsp salt
2 tbsp butter
1 cup all-purpose flour
1 large egg
½ tsp vanilla extract
Vegetable oil for frying
For the cinnamon sugar:
½ cup sugar
1½ tsp cinnamon
For the chocolate dipping sauce:
¾ cup semisweet chocolate chips
½ cup heavy cream
Pinch of salt
Steps
Step 1
In a medium saucepan, bring the water, sugar, salt, and butter to a boil over medium heat.
Step 2
Once boiling, reduce heat to low and stir in the flour all at once. Stir vigorously until a dough ball forms and pulls away from the sides of the pan.
Step 3
Remove from heat and let the dough cool for 5 minutes.

Stir in the egg and vanilla extract until smooth and glossy.

Heat 2–3 inches of vegetable oil in a heavy pot to 350°F (175°C).

Using a small cookie scoop or teaspoon, carefully drop small balls of dough into the hot oil, frying in batches.

In a shallow bowl, mix the sugar and cinnamon for coating.

For the Chocolate Sauce
Step 1
In a small saucepan, heat the cream until just simmering.

Pour over the chocolate chips in a heatproof bowl.
