Trader Joe’s Creamy Coconut Curry Gyoza Bake

⏱️ Prep Time: 10 minutes • 🍳 Cook Time: 30 minutes

I kept seeing this dumpling bake everywhere and this is the version I ended up sticking with. It’s creamy, a little spicy, and comes together with a handful of things I already had in my fridge and freezer.

Pork gyoza baked in a creamy coconut curry sauce with spinach and a drizzle of chili crisp.

The pork dumplings make a big difference here. As they bake, they release a little bit of fat into the sauce, which makes everything richer and more cohesive. It turns into something you can scoop straight out of the dish.

The sauce is simple but layered. Coconut milk and red curry give it that creamy base, and the soyaki adds a slightly sweet, salty finish that rounds it out.

The chili crisp at the end is what brings it together. It cuts through the richness and adds texture, which keeps each bite from feeling too heavy.

Ingredients

🍽️ Servings: 3–4 • 🔥 Calories/Serving: 430 • 💪 Protein/Serving: 16g

For the dumpling bake

  • 1 (13.5 oz) can coconut milk

  • 1/2 cup Trader Joe’s Thai Red Curry Sauce (or similar)

  • 3 tbsp soyaki or teriyaki-style sauce

  • 3 cloves garlic, minced

  • 1 cup (packed) fresh spinach

  • 1 (16 oz) bag frozen Trader Joe’s pork gyoza

For serving

  • 1–2 tbsp chili crisp

  • Optional: sliced green onions

Steps

Step 1

Preheat oven to 375°F.

Step 2

In a baking dish, whisk together coconut milk, red curry sauce, soyaki, and minced garlic until smooth.

Step 3

Stir in the spinach. It will cook down as it bakes.

Step 4

Arrange frozen pork gyoza directly into the sauce in a single layer. Let the tops stay visible.

Step 5

Bake uncovered for 25–30 minutes until the sauce is bubbling and slightly thickened.

Step 6

Let sit for 5 minutes before serving so the sauce settles.

Step 7

Drizzle chili crisp over the top right before serving. Add green onions if using.

Make it your own!

  • 🌶️ Extra Heat
Add chili garlic sauce directly into the base for a more even spice throughout.

  • 🍄 Mushroom Add-In
Add sliced mushrooms to the sauce before baking for more texture.

  • 🥬 Greens Swap
Use kale instead of spinach for a slightly heartier bite.

  • 🍋 Bright Finish
Add a squeeze of lime at the end to balance the richness.
