Sun-Dried Tomato Chicken Flatbreads

I have been trying to think of creative ways to use up the ingredients I already have on hand. These flatbreads consist of staples I pretty much always keep stocked: sun-dried tomatoes, feta, chicken, lettuce, hummus, onion, and naan. It's a different way to combine these ingredients outside of a typical salad or bowl. It comes together quickly and is both filling and healthy.

The warm naan gets slightly crisp around the edges while the feta softens and the chicken stays juicy underneath. I usually toss a little dressed spring mix on top after baking to add something crisp and fresh.

I like using thin-sliced chicken breasts for this recipe because they cook quickly and layer nicely onto the naan. Since the naan rounds are small, thinner ingredients work better than larger chunks.

The hummus acts like the sauce on the flatbread. It keeps everything from feeling dry and pairs really well with the salty feta and tangy sun-dried tomatoes. I used classic hummus in my original recipe, but feel free to switch it up with your favorite variety.


Ingredients

  • 1 thin-sliced chicken breast

  • 1 teaspoon olive oil

  • Salt, pepper, and garlic powder to taste

  • 2 mini naan rounds

  • 2 tablespoons hummus

  • 2 tablespoons chopped sun-dried tomatoes

  • 2 tablespoons thinly sliced red onion

  • 2 tablespoons feta cheese

  • 1 cup spring mix lettuce

  • 1 tablespoon Greek dressing


Steps

Step 1

Preheat the oven to 400Β°F.

Step 2

Season the chicken breast with salt, pepper, and garlic powder.

Step 3

Heat the olive oil in a skillet over medium heat. Cook the chicken for 3 to 4 minutes per side, until fully cooked and lightly golden. Let it rest for a few minutes, then slice it thinly.

Step 4

Place the naan rounds on a baking sheet. Spread the hummus evenly over each naan.

Step 5

Top the naan with the sun-dried tomatoes, red onion, feta cheese, and sliced chicken.

Step 6

Bake for 6 to 8 minutes, until the naan is warmed through and slightly crisp around the edges.

Step 7

Toss the spring mix lightly with the Greek dressing.

Step 8

Top the warm flatbreads with the dressed spring mix before serving.


Make it your own!

    Mix a little minced garlic into the hummus before spreading it onto the naan.
